(B) A FOOD EMPLOYEE may drink from a closed BEVERAGE container if the container is handled to prevent contamination of: (1) The EMPLOYEE'S hands; (2) The container; and (3) Exposed FOOD; clean EQUIPMENT, UTENSILS, and LINENS; and unwrapped SINGLE-SERVICE and SINGLE-USE ARTICLES. Observed some employee food items being stored above food items for the breakfast service. Provide for the consumption and storage of employee food be separate from food items for food service. This paragraph does not apply to EQUIPMENT and UTENSIL cleaners and SANITIZERS that are stored in WAREWASHING areas for availability and convenience if the materials are stored to prevent contamination of FOOD, EQUIPMENT, UTENSILS, LINENS, and SINGLE-SERVICE and SINGLE-USE ARTICLES. Observed a can of Lysol spray being stored right next to a bag of paper plates in the bottom cabinet in the kitchen. Provide for chemical items to be stored separate and below all food and food equipment. Lysol can was moved to the chemical storage rack. COS |
